Summer Tomato and Eggplant Pie with Mozzarella
Salting eggplant slices before cooking draws out moisture and bitterness․ Eggplant slices are browned in a pan and baked in a tomato-eggplant pie․ I make this pie with fresh tomatoes to use them up․ The set egg filling slices easily when served․
