Roasting sweet potatoes in a hot oven browns the cut sides while the centers turn tender, and a hard first sear gives the ground beef browned bits for its saucy taco filling. I make these street corn beef bowls when I want warm and cold parts together (my favorite kind of dinner).
I leave the corn in the skillet long enough for browned, charred spots, and I don't stir it much as it cooks. The dressing has lime, mayo, sour cream, plus cumin, paprika, and chili powder, and it has enough body to cling to the kernels instead of running into the potatoes. I mix it after the corn leaves the heat. The skillet is for browning.
I finish each bowl with diced avocado and either cotija or queso fresco. Tortilla chips work for scooping up the potatoes and beef, and a final sprinkle of Tajin brings citrus and spice, while the toppings stay separate until I assemble the bowl and the corn mixture doesn't disappear into the hot base.
The jalapeño is optional, though I use it when I've got one. Stir it through the cooled corn with cilantro and green onions before adding the dressing. That spreads the heat through the topping instead of leaving one sharp spoonful, and the herbs still show up against the charred kernels.

Preheat the oven to 400°F. Put the sweet potatoes on a large rimmed sheet pan, drizzle with 3 tablespoons olive oil, and season with 3/4 teaspoon paprika, garlic powder, 3/4 teaspoon salt, and 1/2 teaspoon black pepper. Toss, then spread into an even layer.

Roast for 15 minutes. Toss the potatoes, then roast for another 10 to 15 minutes, tossing every 5 minutes, until tender and nicely charred. Set aside.

Heat a large skillet over high heat and add 1 tablespoon olive oil. Add the corn in an even layer, season with about 1/4 teaspoon each salt and black pepper, and cook for 5 to 8 minutes, stirring only occasionally, until browned and slightly charred. Add the minced garlic and cook for 15 seconds. Transfer the corn to a bowl and let it cool to room temperature.

Heat the remaining 1 tablespoon olive oil in the same skillet over high heat. Add the ground beef and sear undisturbed for about 1 minute per side, then break it apart with a wooden spoon.

Add the taco seasoning and cook until the beef is fully browned. Add 1/4 cup water, scrape up the browned bits, and simmer briefly until slightly saucy. Add 1/4 to 1/2 cup additional water if needed for a saucy consistency.

Zest and juice the lime to get 1/4 teaspoon zest and 1 1/2 tablespoons juice. In a separate bowl, whisk the zest, juice, mayonnaise, sour cream, cumin, remaining 1/4 teaspoon paprika, and chili powder until smooth. Season with about 1/4 teaspoon each salt and black pepper.

Stir the cilantro, green onions, and jalapeño, if using, into the cooled corn. Add the dressing and toss until well coated. Adjust the seasoning if needed.

Divide the roasted sweet potatoes among bowls. Top with the ground beef and street corn mixture. Finish with avocado, cotija or queso fresco, tortilla chips, and Tajin if desired.
